I missed the best of thistle season in the low elevations, so here's a video from last year! This is musk or nodding thistle, Carduus nutans. It's my favorite of the thistles that I've tried in Colorado. once you get past the spines they have flavors of celery, cucumber, and melon. They can also be slightly bitter sometimes.
