2017年3月18日 · This dip is spicy but just ever so. It’s sweet from the potato and the beans give it a hummus-esque vibe. I like eating this with toasted naan bread, sliced pepper or cucumber, but tortilla chips would probably be good as well!

Spread sweet potato and garlic on the baking sheet, drizzle with oil, salt & pepper, and roast for ~30 mins or until tender. Allow to cool slightly, then add to food processor and purée until smooth. Add in tahini, all seasonings and lime juice. Blend well.

Preheat oven to 400°F. Slice the top off of the garlic, exposing the cloves. Drizzle olive oil over the potato and garlic, and season with a little salt. Roast for 30 to 35 minutes, until tender. In a blender or food processor, combine all ingredients and blend until completely smooth.
